Low-carb cauliflower risotto🤤

Ingredients

▫️750 g cauliflower

▫️6 cups sliced fresh cremini mushrooms

▫️420 ml heavy whipping cream

▫️50 g butter

▫️3 tbsp lemon juice

▫️1 tbsp onion powder

▫️75 g parmesan cheese

.

Add to each serving:

▫️75 g fresh spinach

▫️100 g goat cheese

▫️1 tsp olive oil

.

Instructions

1️⃣Divide cauliflower into florets and grate it with the coarse side of a grater. You can also purchase already "riced" cauliflower.

2️⃣Add cream, butter, onion powder, mushrooms, and lemon juice to a large skillet and heat until simmering.

2️⃣Add cauliflower and continue to simmer, stirring frequently, for 10-15 minutes.

4️⃣Season with salt and pepper.

5️⃣Add grated parmesan cheese; it will melt as you stir it in. Stir for a few minutes.

6️⃣Chop the spinach coarsely and combine well.

7️⃣Serve with goat cheese and a splash of olive oil!
