Ingredients

ā–«ļø750 g cauliflower

ā–«ļø6 cups sliced fresh cremini mushrooms

ā–«ļø420 ml heavy whipping cream

ā–«ļø50 g butter

ā–«ļø3 tbsp lemon juice

ā–«ļø1 tbsp onion powder

ā–«ļø75 g parmesan cheese

Add to each serving:

ā–«ļø75 g fresh spinach

ā–«ļø100 g goat cheese

ā–«ļø1 tsp olive oil

.

Instructions

1ļøāƒ£Divide cauliflower into florets and grate it with the coarse side of a grater. You can also purchase already "riced" cauliflower.

2ļøāƒ£Add cream, butter, onion powder, mushrooms, and lemon juice to a large skillet and heat until simmering.

2ļøāƒ£Add cauliflower and continue to simmer, stirring frequently, for 10-15 minutes.

4ļøāƒ£Season with salt and pepper.

5ļøāƒ£Add grated parmesan cheese; it will melt as you stir it in. Stir for a few minutes.

6ļøāƒ£Chop the spinach coarsely and combine well.

7ļøāƒ£Serve with goat cheese and a splash of olive oil!
