Argula Salad Recipe


Avocado, Tomato, and Arugula Salad


This brain-friendly salad nourishes your brain, supports your microbiome, and helps to heal your gut wall. It will help balance your blood sugar and reduce inflammation.

ā–Ŗļø2 Tbsp extra virgin olive oil

ā–Ŗļø1 Tbsp balsamic vinegar

ā–Ŗļø1 small clove garlic, crushed through a press

ā–Ŗļø1/4 tsp salt

ā–Ŗļø1/4 tsp ground black pepper

ā–Ŗļø4 cups baby arugula

ā–Ŗļø4 ripe medium tomatoes (about 12 oz total), cored and cut into wedges

ā–Ŗļø1 large ripe avocado, halved, pitted, peeled, quartered, and sliced crosswise

ā–Ŗļø1/4 cup thinly sliced red onion

ā–Ŗļø1 tsp toasted sunflower seeds (substitute with slivered almonds or pumpkin seeds)

In a salad bowl, whisk the oil, vinegar, garlic, salt, and pepper together. Add the arugula, tomatoes, avocado, and onion; toss gently to mix. Sprinkle with the sunflower seeds.
